Tagliatelle alla bottarga

This recipe comes from Sardinia and I suggest using fresh pasta.




750 gr of fresh tagliattelle or spaghetti…
100gr of bottarga (cured mullet roe)
3 cloves of garlic
Olive oil
Salt, pepper
Parsley (2 tablespoon)



Put some oil in a pan and fry the cloves of garlic. When the cloves of garlic become golden take them out, put them aside and reserve some of the flavoured oil.

Boil the fresh spaghetti for 2 minutes in salted water and add a tablespoon of oil. Drain the pasta. Put it in a bowl.

Then add the oil flavoured with garlic and the minced parsley to the drained spaghetti. Grate the bottarga and add it to the pasta. Stir a little.


Mmm it has a special sea taste!!!!!

Aquesta recepta és originària de Sardenya. Recomano utilitzar pasta fresca.



750 gr. de tagliatelle, espagueti...
100 gr. de botarga de múgil  (ous secs i salats)
3 grans d’alls
Oli d’oliva
Sal, pebre
Julivert picat (dues cullerades)



Posarem una mica d’oli en una paella i fregirem els grans d’all. Quan estiguin daurats els traurem  i reservarem l’oli aromatitzat amb all.

Bullirem els espaguetis durant 2 minuts ( si la hem comprat fresca, sinó seguirem les instruccions perquè quedin al dente) en aigua salada i un raig d’oli; l’aigua ha de ser abundant sinó la pasta ens queda enganxada.

Col·larem la pasta i la posarem en un bol.

Afegirem l’oli aromatitzat i el julivert als espaguetis. Ratllarem la botarga per sobre els espaguetis remenarem una mica.


Mmmm, té un gust a mar intens!!!
