Carrot croquettes - Croquetes de pastanaga

Do you have leftovers? Fish, meat or vegetables can make a crunchy croquette.
It´s not so difficult and really worth it!!!



A bunch of carrots
1 sweet onion
A clove of garlic
40gr. of minced hazelnuts
1 cup of hot milk
2 tablespoon of flour
Salt, pepper, nutmeg
2 beaten eggs
Breadcrumbs for the coating
Oil



Put the carrots in a saucepan of boiling water until tender (10-15 minutes). Then chop and set them aside.

Heat the oil in a saucepan over a medium heat. Add the sliced onion and the clove of finely minced garlic. When the onion becomes golden, add the finely chopped or minced carrots and the minced hazelnuts. Cook them for a couple of minutes.

Add the flour, the hot milk, the salt, pepper and the nutmeg. Stir in a steady stream until the sauce is smooth.

Put the mixture in the refrigerator for 1 hour or more, depending on your needs.

Pour the breadcrumbs into a bowl and the beaten eggs in another bowl.

Then divide the mixture and roll pieces of mixture into large balls and dip this into the beaten egg. Then roll them in the breadcrumbs until well coated.

Take a frying-pan and fill half way with oil. When the oil is hot, place the croquettes in the hot oil and fry, turning them until golden. Remove the croquettes and set on a paper towel to absorb the oil.

Serve at once!!! ;))

Us ha sobrat menjar d’un altre dia? Peix, carn o verdures...podrien ser uns ingredients fantàstics per unes delicioses croquetes.
No és gens difícil i realment val la pena!!!


Un manat de pastanagues
1 ceba
1 gra d’all
40gr. d’avellanes triturades
1 got de llet calenta
2 cullerades de farina
Sal, pebre, nou moscada
2 ous batuts
Farina de galeta
Oli


Agafarem un `pot i posarem les pastanagues en aigua bullent fins que estiguin tendres (10-15 minuts). Les tallarem a rodanxes  i les reservarem.

Posarem a escalfar oli a foc mig, en una cassola. Hi tirarem la ceba tallada a rodanxes i el gra d’all finament  picat. Quan la ceba es comenci a daurar, afegirem les pastanagues i les avellanes. Ho courem durant un parell de minuts
.
Afegirem la cullerada de farina, remenem i hi tirarem el got de llet calenta, la sal, el pebre i la nou moscada. Remenem altre cop fins que veiem que es va espassin.

Posarem la barreja dins la nevera fins que es refredi (1 hora).

Dividirem la pasta i li donarem forma de croqueta. La passarem per ou batut i després l’arrebossarem amb farina de galeta.

Posarem suficient oli en una paella per fregir les croquetes. Quan l’oli sigui calent hi tirarem les croquetes i les retirarem quan les veiem daurades. Les col·locarem sobre un paper de cuina perquè així absorbeixi l’oli sobrant.
